Maximilien offers classic French fare with a timeless view

On another visit, the fish du jour was described by the server, jerking his thumb in the direction of the water, as a bluenose bass caught near the Olympic Peninsula. But as soon as I finished enjoying the fine firm-fleshed fillet bathed in beurre blanc, I walked over to Jack’s Fish Spot to buy some. No can do. It wasn’t available. It’s not from local waters, I learned, but wild-caught in the South Pacific.

Maybe it was unintentional confusion on the server’s part, but restaurants need to be cautious about this kind of bait-and-switch. Especially when the menu touts local ingredients.
