But as soon as I finished enjoying the fine firm-fleshed fillet bathed in beurre blanc, I walked over to Jack’s Fish Spot to buy some. No can do. It wasn’t available. It’s not from local waters, I learned, but wild-caught in the South Pacific.

Maybe it was unintentional confusion on the server’s part, but restaurants need to be cautious about this kind of bait-and-switch. Especially when the menu touts local ingredients.
